The traditions of the mountain regions of France, Spain, and Switzerland go back for centuries. Cheeses of those regions are unique and have incredible histories of their own. Let us take you on a global and historical tasting tour of these tradional European creations while also seeing what US producers are doing to pick up the torch and create their own twist on these classics.
